MINCARE DE LINTE ROSIE CU LAPTE DE COCOS(COCONUT DHAL)


dhal,dal ,dahl,daal denumeste o serie de boabe uscate ,cum ar fi cele de linte,mazare,fasole,din care se fac diverse tocanite ,traditionale in bucataria indiana,dar si cea din nepal,pakistan,bangladesh sau sri lanka.bogate in fibre,dar si in proteine,ele vin sa creeze echilibrul necesar in dieta zilnica ,in ciuda unei bucatarii caracterizate de un consum mai mic sau chiar lipsit de carne,insotindu-se in servire de orez fiert simplu sau roti,un fel de lipii facute din faina de griu,sau in amestec cu faina de soia,naut,fara agent de crestere.un fel vegetarian foarte gustos si placut,o alternativa salutara pentru o zi in care vrem facem pauza de la carne.
am folosit in reteta de fata linte rosie ,denumita si linte egipteana sau masoor daal,
pe care cel mai des am adaugat-o in tot felul de supe,e un liant minunat.
de asta data insa mi-am propus sa o prepar cu lapte de nuca de cocos,tocmai aveam proaspat facut in casa .metoda de preparare a laptelui de cocos a fost simpla,dupa ce am spart nuca in unul din cele 3 puncte negre de la extremitate si am colectat apa de cocos(pe care o bea mereu micul simon),hus i-a dat unul-doua ciocane,a spart nuca in bucati ,am desprins miezul de pe coaja si am pus la blender,in apa plata(cca 750 ml),rind pe rind ,tot miezul de nuca.dupa etapa blenduire,urmeaza stoarcerea intr-un tifon ,separind astfel materialul lemnos de cel lichid.pe ambele eu le depozitez in pungute,la congelator.
revenind la dhal,sa enumar ingredientele:
250 gr linte rosie,
400ml lapte de cocos,
2 cepe rosii,taiate marunt ,
2 rosii medii,taiate marunt,
1 manunchi mic de patrunjel,
2-3 linguri de ulei de masline,
1 lingura de coriandru,
1 lingurita fulgi de chili,
1lingurita turmeric,
sare,piper.
modalitatea de preparare la care am recurs,extrem de simpla:se pune la fiert in laptele de cocos,lintea bine spalata ,amestecata cu rosiile,ceapa,2 linguri de ulei de masline,turmericul,sarea,piperul.asta pentru cca 20 minute,pina cind lintea este gatita, cind amestecam si patrunjelul tocat,iar deasupra turnam restul de ulei in care am prajit putin,cit sa-si dezvolte miresmele,coriandrul putin mojarat si fulgii de chili.am servit cu lipie crocanta, un succes total asupra papilelor noastre,poate si alor voastre daca incercati reteta.enjoy!

  4. You impressed me a lot- looks like you have it perfect here! I can never get the breaking of the coconut right, so my husband is the expert (although very superstitious about hitting it in "god's eyes", that is the dark dot:)).
    Love the intense color of your dhal!…you made me hungry for Indian food again!
